So I got an email yesterday requesting a dozen vegan cupcakes and funnily enough, it was from a girl in the UK who wanted them delivered to her boyfriend in Toronto. And since my toddler decided today would be a no-nap day, I got to stay home and amuse him while my husband went out into the rain to do the delivery!
So to anybody out there who wants to send cupcakes to someone in Toronto, I’m ready to take your order (woohoo PayPal!)

Wow! It’s amazing what people can do when they come together for a cause with an open heart. Cupcakes for Haiti in Toronto raised $9800 that will be matched dollar for dollar by the government. Susana Molinolo poured her heart and soul into and froze her fingers off running the event and the bake sale spread was fantastic. My Berry Nice cupcakes at $10 a pop sat next to a box of cupcakes which was auctioned off for $7000! And in order to continue raising funds, a Cupcakes for Haiti cookbook is being put together, and yup, Devilish cupcakes will be in it. Stay tuned!

I have to admit I have been stuck in a baking rut for several months. It didn’t help that the last order of 2009 went so badly. But I can see a light at the end of the tunnel, finally, since I found out about and offered to participate in Cupcakes for Haiti in Toronto, this Saturday Jan 23. Susana Molinolo is the superwoman who organized and is hosting this event, where there will be LOTS of cupcakes, other baked goods, and a kids’ decorating table. Devilish cupcakes will be a very small part of the offerings, but I am just happy to be doing something productive, and to finally get my baking mojo back. Here is a pic of a test batch I whipped up today, vanilla cupcake with lemon buttercream. I think they look smashing white on white with no colouring this time. On Saturday, my Berry Nice cupcakes will be at the table…

I went through hell to complete this order for StraNexus, which was for only 20 cupcakes, but for some reason, everything kept going wrong. First, my spatula broke, and then half of my frosting butter liquified (don’t ask). Then to top it all off, packaging 20 cupcakes individually in cello bags turned out to be a nightmarish task I hadn’t counted on. All in all, I think they looked pretty damn good considering - unfortunately no pics post-cello trauma, as I was on the verge of a total freak-out and was in no state to be operating a camera! So I am happy to say good-bye to 2009, and looking forward to calmer, gentler cupcake orders in 2010! ![]()

PS: These cupcakes where “halal” meaning basically I used alcohol-free vanilla extract, and no gelatin was in any of the ingredients.

It’s been a while since the last update and life has taken an unexpected turn - Devilish will be leaving Lisburn and moving to Toronto, Canada August 9.
To everyone who has purchased our cupcakes or just dropped by the website - THANK YOU so much for your support. We are looking forward to continued success in our new locale.
At our final Lisburn farmers market we were wished bon voyage by some of our best customers, and also paid another amazing compliment - a cafe owner had a taste and said our cupcakes were better than the ones she brings in. I did a little experimenting with coconut cream to make these pina colada cupcakes for our family bbq. The weather here in Northern Ireland has been glorious for the last few days, and I couldn’t resist busting out the mini umbrellas and lime slices for extra summery cupcakes. BBQs are a great excuse to order a dozen Devilish cupcakes!

I was very happy to have the chance to make gluten-free cupcakes as requested by a customer for her Mum’s birthday. They turned out really well, and look great with their raspberry rose swirl tops.

Tuesday is market day in Lisburn, and the town is packed with people. So, we’ve decided to try cupcakes in the Cafe Tuesday and Wednesday to see if extra customer volume will translate into extra cupcake sales. Also the cupcake display has been moved to the perfect impulse buy spot right next to the till, so hopefully more people will think “Oh what the heck, I’ll take one of those lovely looking cupcakes!” ![]()

The samples are cut up mini cupcakes, which topped of a bit of mini mania at Devilish headquarters this week. We made minis for Posh salon May Madness day and also as a treat for a final yoga class. Here’s a picture I like to call March of the Minis!
